On the road, we need flexible recipes that, despite a not perfect
equipped camping pantry function
Simple banana bread
from the Omnia
You either like it or you don't: banana bread. We actually really like eating it on a camping trip because it's a healthy snack for the trip or a hike and the bread keeps for several days.
I've been baking this recipe for a long time and it always turns out well, even when I play around with the ingredients. And that happens in camping cooking. You can make it vegan or serve it with yoghurt, add more or less nuts or chocolate, and add more or less sugar depending on the day.
Ingredients:
- Omnia with silicone mold
- 2 ripe bananas
- Sweetener (e.g. 5 dates + 50g sugar)
- 4 tbsp margarine
- 5 tbsp milk
- Possibly 1 tablespoon apple cider vinegar if available in the camper
- 70g (~ 1/2 large Roadtyping enamel mug ) fine oat flakes
- 170g (~ almost full large roadtyping enamel mug ) flour or wholemeal flour
- 3 tbsp nuts
- 50g (~ 1/4 large Roadtyping enamel mug ) cocoa
- 1.5 tsp baking powder
- 1/2 tsp cinnamon
- 1 egg (can be left out for a vegan version)
- 1 pinch of salt
- possibly 1
preparation
Peel the bananas and mash them with a fork. Then add the other ingredients one by one and stir to form a smooth dough. You can also use our large enamel bowls for this. Pour the dough into the Omnia with silicone mold and decorate the banana bread as desired, e.g. with a banana, nuts and chocolate chips.
Bake covered at full power for about 30 minutes, then reduce the heat by 1/3 and bake for another 20 minutes.
