The best vegetarian burger we have ever had
made! Perfect for the grill.
Vegetarian Burger
with grilled cheese, eggplant and carrot salad
Honestly, this burger is our absolute favorite burger of 2024 and we love making it on the grill. The plancha on our BOWL from Höfats is especially perfect for all the ingredients of our grilled cheese burger: eggplant, zucchini, onions, grilled cheese/halloumi and the burger buns are perfect and it's so quick. And the best part: you can enjoy the burgers by the warming fire, because the BOWL from Höfats turns from a grill into a fire bowl in no time at all.
This burger tastes especially delicious with carrot salad and a homemade relish with pickles and mayonnaise :-)
Ingredients:
- Burger Buns (we love these vegan burger buns from Rewe )
- Grilled cheese or halloumi
- 1 eggplant and/or 1 zucchini
- 1 red onion
Relish:
- 200g natural yoghurt
- 50g mayonnaise
- 4 medium-sized pickles
- 1 tsp mustard
- Salt and pepper
Carrot salad:
- 500g carrots
- Vinegar e.g. apple cider vinegar or salad vinegar
- Olive oil
- 50g tartar sauce
- Fresh parsley
- Spice bag with your favorite spices, e.g. Harrissa or chili.
- First, we recommend preparing the carrot salad. You can make it half a day in advance, because then it will marinate nicely. But it also tastes delicious fresh. To do this, finely grate the carrots and mix a salad dressing with vinegar, oil and remoulade and pour it over the carrots. Season with salt and pepper. Add the fresh, flat-leaf parsley just before serving.
- Cut the eggplants into slices and add salt.
- For the relish, chop or finely slice the gherkins and mix all the ingredients together.
- Now you can remove the salt from the eggplants. Either you dab the salt off with a cloth/kitchen towel or you wash them briefly under water and dab them dry.
- Cut the zucchini into slices and the red onion into rings.
- Cut the grilled cheese sideways into several slices, approx. 0.5cm thick.
- Spread some relish on each bun half and top with eggplant and zucchini slices, grilled cheese, more relish and onions.
If you make the burger on the grill, you can grill all the ingredients on the hot plancha at the same time; the buns only need a few minutes. We put them on the grill with the cut side. You can use a little oil for the vegetables.
In the kitchen, you can fry the vegetables and grilled cheese separately in the pan and put the buns in the oven for 5 minutes.
